Okay, so I know this sounds weird, but it turns out that massaging raw kale with a little bit of olive oil completely changes the texture and makes kale salads much easier to eat.
I learned this trick from Russ Parsons of the Los Angeles Times: he describes how a quick massage transforms tough, fibrous kale into silky leaves. Lately I've been using dinosaur (aka Tuscan) kale for salads. After the massage treatment, I add some lemon juice and grated pecorino cheese--delicious!
