I have to admit something.
I don't really like chicken. It's cheap and easy, sure, but most of the time I'm just so BORED by it. (I know, I know, first-world dramz, but still.) I love a blank canvas as much as the next cook, but sometimes I just want to pop something in the oven and be pleasantly surprised by the flavor instead of feeling like I've had this meal a million times.
Of course, Ina Garten rides to the rescue again with her absolutely magnificent lemon chicken breast recipe. I always have a bag of boneless, skinless chicken breasts in my freezer (thanks, Costco!) so this is a great stand-by meal if I forgot to prepare something ahead of time, but it doesn't taste like a boring stand-by meal, but rather like an all-day-slaving-over-a-hot-stove meal. Win!
I've also played with the recipe, adding limes instead of lemons or rosemary instead of thyme. Every variation is delicious.
According to the Food Network, this is a recipe from "How Easy is That?" the new Barefoot Contessa cookbook, which I'm hoping that my husband someone will buy for me.

This is very similar to my lemon pepper chicken recipe. I sprinkle chicken, sliced up carrots, onion, and new potatoes with lemon pepper spice and squeeze one whole lemon in on them and put a pat of butter on each chicken. Stick them in the casserole dish. Cover with foil. Cook for an hour at 400!

This sounds delicious! I might have to try it. I notice that she seems to be using skin-on breasts in the recipe, but do you use skinless? That's what we get at Costco, and I assume you do, too.

@Lauren - I do use skinless chicken breasts from Costco. It's just easier and still delicious!
