This is very similar to my lemon pepper chicken recipe. I sprinkle chicken, sliced up carrots, onion, and new potatoes with lemon pepper spice and squeeze one whole lemon in on them and put a pat of butter on each chicken. Stick them in the casserole dish. Cover with foil. Cook for an hour at 400!

This sounds delicious! I might have to try it. I notice that she seems to be using skin-on breasts in the recipe, but do you use skinless? That's what we get at Costco, and I assume you do, too.

@Lauren - I do use skinless chicken breasts from Costco. It's just easier and still delicious!
