I'm a big fan of tofu, but every time I make it, it comes out soggy, soft and unpalatable, unless I buy the pre-grilled/baked kind from Trader Joe's (yet another TJ's item I cannot miss!).
I tried marinating! Grilling! Sauteeing! It was all so soggy!
Then my vegetarian sister-in-law told me the secret: You have to press it with a heavy pan or a brick for five to ten minutes to squeeze out some of the water in it. Soggy tofu no more!

I am so scared to cook with tofu. I've had it before and it was fine, good, even, but I just don't know what to do with it. (Obviously I'm a total food scaredy-cat). Anyway, I would love to see more posts about cooking with it!
