Last week, I posted the recipe I use for Romesco sauce and mentioned that one of the things I use it for is naan pizza. It couldn't be simpler! Tandoori Naan is the brand that I use and for pizza, I buy the garlic variety, but any of them would work perfectly well.
1 pkg Tandoori Naan (this contains two naan)
Romesco sauce
Shredded mozarella cheese
Shredded parmesan cheese
Toppings (I used thinly sliced zucchini but you could use whatever you prefer)
Preheat oven to 350 degrees. Remove naan from the package and place on a parchment lined cookie sheet. Spread a thin layer of romesco sauce almost all the way to the edges of the naan. Top with mozarella cheese. Add toppings of your choice. Add parmesan cheese. Bake until heated through and cheese is melted and bubbly, the naan is already pre-cooked so this takes around 10 minutes or less (depending on how loaded it is with cheese and toppings)
*The pizzas on the right were made with regular homemade pizza sauce but the same method otherwise. They were obviously also made for the boys, who eat meat.

YUM. Tonight's Friday Night Pizza Night; maybe we have naan pizzas in our immediate future!
