Last week I was shopping at Kohl’s (no, this isn’t a Style Lush post, but I had you going for a moment, didn’t I?), and as I was checking out, I noticed a book sitting next to the register. Normally, I wouldn’t think anything of it, since the store usually has kids’ books on sale for their education support program, but this one caught my eye because it wasn’t a children’s book. It was a cookbook. And one that seemed destined to be a part of my kitchen collection, what with the words fast, quick, and simply delicious on the cover.
So I picked up the Good Housekeeping Fast Weeknight Favorites cookbook.

Inside are 200 entrée recipes that use pantry staples and simple steps to get these dishes on the table quickly. Sections are broken down by main ingredient, so you don’t have to scan hither and yon to find all the pork options. A vast majority have beautiful color pictures (the likes I which I will never replicate in my own kitchen) to help guide you to the finished product. And Good Housekeeping is pretty much the ultimate in seals of approval, right?
I road tested the book with the plum balsamic chicken (it was a toss-up between that and the apple dijon chicken, but plums were on sale, so there you go). It came together easily and actually bared a strong resemblance to the picture. In the case of full disclosure, I did add a smidgen of cornstarch to thicken the sauce, because that’s how I roll. My husband finished his plate, my 3 year old liked the “fruity,” and although I couldn’t get my 6 year old to taste the sauce, he did eat the chicken itself, despite his current chicken-is-not-chicken-unless-it’s-a-nugget phase. I myself thought it was a little slice of summer on a dish.
And did I mention Kohl’s has priced this little nugget at $5? Yes, yes, they did. (It’s also available lots of other places, including Amazon, which is charging $18.96 at the moment).
A big thumbs up for this cookbook, for its ease, its honesty, and frankly, its price tag.
