I’ll come clean first and tell you that this little appetizer is not a unique little gem I slaved over in the kitchen to create, but they will go from 50 to zero in less than an hour. This is my absolute go-to appetizer/party treat and I have taken it upon myself to spread the word of these magical little morsels.
Bacon Cheese Tartlets. They’re on every single Pillsbury Creations tube and you can find the basic recipe on any website. In fact, last week Nora reviewed a recipe app that actually displayed them. I was debating making the tarts my topic for this week and it must have been fate. You've probably stumbled across them while looking for new recipes, but have you ever tried making them?
The first time I made these I did it exactly as the recipe instructed in a normal sized muffin tin. They came out great and I proudly brought them to a bridal shower. I turned my back for one minutes and all 30 were gone. Success! I filed this recipe away and promptly forgot about it for two years.
I stumbled across the recipe again just in time for my college graduation party last year. This time I made them in a mini muffin pan (as one regular muffin sized tartlet is a meal unto itself). I played with the ingredients a little, changed the presentation a bit, and yielded about 50 little bite-sized appetizers. I've since made it a few different ways in hopes of perfecting this recipe and I think I have come very close (but I will continue to practice).
The Pillsbury Recipe Creations is the best for this little project. You can get the most for your money out of a can by rolling it out flat and cutting small, one-inch squares with a pizza cutter. You can get about 50 appetizers out of two tubes. In a pinch, you can swap out the recipe creations for just the regular pre-cut crescents, just stretch them as far as you can.
For 50 Appetizers:
2 Cans Pillsbury recipe creations
8 ounces Swiss cheese
4 ounces extra sharp cheddar cheese
2 Large eggs
3/4 Cup cooked bacon, chopped (I don't think anyone would complain if you use more...)
1/4 Cup green onion, chopped
Arrange the dough in the muffin pan like little cups. Mix the remaining ingredients together and spoon about 1/2 Tbs mixture into the cups. Bake at 350 degrees until the dough turns a golden brown, about 12-15 minutes.
I make these for every get together, and on more than one occasion they were met with noises that are not appropriate for a family friendly blog. They're my most requested recipe and you can adjust the recipe however you like. I think I might try a breakfast version some time with sausage, cheese, and bacon. Brunch anyone?

WOW! I'm making these this weekend. Thanks for sharing! Wonder how I missed that recipe before? Hmm. My go-to is crostini. I use a fresh baguette, sliced into little rounds, topped with a dollop of pesto sauce and a strip of sundried tomato. They last approximately 5 seconds.
