So FYI, regarding the roasted okra? If you do not get it wet, AT ALL, like not one drop of moisture (aka don't rinse it, NYT), it won't be slimy. This is according to my mother, who does make some damn good okra. And it's never slimy.

If you take slightly damp okra and run it through the cornmeal once, then dip it in an egg/milk mixture and run it through the cornmeal again you can have really good okra that doesn't lose all it's breading. Oh and I always throw a chopped onion in with mine. Heavenly.

Now, be fair. Mom inherited the "cook the snot out of it" instruction from Granny when she was taught to fry okra after marrying dad. Either way, though, yes it's a disgusting word.
