I am so glad to see my cauliflower crust going strong! It was something I made up in my kitchen back in 2008 while we were watching tv and I wanted something low carb + pizza. I used Juliet's recipe and made this with fresh tomatoes, mushrooms, herbed eggplant, garlic and grilled onions, topped with shredded mozzarella. I used egg beaters but added a yolk (recipe was doubled) when it didn't stick together well. I don't like cauliflower that much but I LOVE this crust. This is a keeper! omg I have a broken plate necklace! I get compliments every time I wear it. She must be more famous that I realized! Intrigued sounds like the perfect word for it. I have to hide veggies. I was so against it, but neither of my kids will touch them (even the infant! arg!) so I'm reduced to squash waffles and carrot/banana bread and zucchini muffins. Always up for another way to get some in there!
