A few months back I introduced a co-worker to Pinterest. Yesterday she brought her own Pinterest-influenced food to work. Obviously I needed to share (and do it myself)!
Did you know mixing 15oz of canned pumpkin could make the most delicious muffins/cupcakes you've ever had? Wow. Seriously. I hate baking. I have no sweet tooth to speak of, but these blew me away. Mix 15oz. canned pumpkin and one box cake mix (I used white) and bake at 350 for 20 minutes. I've never had better cupcakes. These were so moist and delicious I felt like I needed to share with every single person I could. My only question now is...
Anyone have a great pumpkin inspired icing I can borrow?






I bought stuff this weekend JUST to do this - thanks for the reminder! Someone showed me this last fall and it's the only way I can get my husband to eat a (semi)healthy breakfast. (It's something like 2 WW pts.)
We get fancy and use spice cake mix and then sprinkle the top with brown sugar/cinnamon for the last 5-10 minutes of baking.

I use Sarah Lena's recipe! We add raisins to half of the, because my husband likes them that way.

What understanding do you've got about traveling? Do each vacation be meticulously planned by you? If so, are you aiming to better it? I have an old recipe like this but instead of cake mix you whip up the ingredients from scratch (not that much extra work and you can toss in your own spices like clove, ginger, nutmeg and cinnamon), then I top it with cream cheese frosting and autumn leaves sprinkles. Delicious and pretty! But I also like Sarah Lena's topping idea. Will try that next time!

Please forgive my stupidity, but do you add the other ingredients they mention on the box (egg whites, oil, water) as if you were making a cake? Or do you just use the mix and the pumpkin and nothing else? I feel so dumb asking this, but I don't want to potentially ruin this when I try it, because I don't often keep eggs in the house. :)

That's not a stupid question! The answer is no! No other ingredients other than the pumpkin and the dry cake mix. You save so much fat and calories by nixing the oil and eggs!
