I bought stuff this weekend JUST to do this - thanks for the reminder! Someone showed me this last fall and it's the only way I can get my husband to eat a (semi)healthy breakfast. (It's something like 2 WW pts.)

We get fancy and use spice cake mix and then sprinkle the top with brown sugar/cinnamon for the last 5-10 minutes of baking.

I have an old recipe like this but instead of cake mix you whip up the ingredients from scratch (not that much extra work and you can toss in your own spices like clove, ginger, nutmeg and cinnamon), then I top it with cream cheese frosting and autumn leaves sprinkles. Delicious and pretty! But I also like Sarah Lena's topping idea. Will try that next time!

Please forgive my stupidity, but do you add the other ingredients they mention on the box (egg whites, oil, water) as if you were making a cake? Or do you just use the mix and the pumpkin and nothing else? I feel so dumb asking this, but I don't want to potentially ruin this when I try it, because I don't often keep eggs in the house. :)

That's not a stupid question! The answer is no! No other ingredients other than the pumpkin and the dry cake mix. You save so much fat and calories by nixing the oil and eggs!
