I'm currently on a bit of a diet, and have reached the point at which I spend a great deal of time thinking about things I will eat in the future, when my 30-day sentence is up. Daydreaming about things I would like to be eating is already one of my primary activities, second perhaps to breathing, but it currently has the extra spice of The Forbidden. It so happens (by careful design) that Day 31 is my anniversary, and the bottle of Porto Blanco I obtained on a springtime trip along the Texas Wine Trail is waiting patiently for this very occasion.
The problem is, I'm having a hard time getting organized beyond "drink the white port." Part of the issue is that my current state of deprivation is causing slight fantasy-idea-overload (COOKIES-QUESO-TWIZZLERS-MAPLESYRUP). The other part is that I've never had this particual beverage outside of a tasting room.
I know that ruby and tawny ports are generally considered a post-meal drink, so I've been casting about in the dessert-recipe arena. I also know that figs are in season, so I'm considering something along the lines of these Baked Figs with Honey, Ginger, and Vanilla. Or, frankly, I could go Fig, Gorgonzola, and Honey Tartines and call it a meal. Though, actually, now that I'm thinking about it, white port strikes me as a lovely breakfast time treat.
What do you think? Am I barking up the wrong (fig) tree? I'm open to any suggestions that don't involve steamed broccoli.






I have a tendency to buy dessert wine when I go tasting and then I have an over abundance that never gets opened (minus the port, because that stuff's awesome).
Since this stuff is super sweet, I'm more likely to say to drink it post-meal w/o anything. But the wine app I have says things like vanilla cake, 3 musketeers, Hershey's w/almonds, chocolate w/fruit, or bread pudding.

I have never had white port but it sounds yummy! I would probably pair it with anything that you pair a moscato with. I think the Gorgonzola in the 2nd recipe would go especially well with it.

I love dessert wine with cheese. Have you ever had St. Andre cheese? It's one of my favorites--mild and super creamy and I bet it would be excellent with white port.
