I regularly use Earth Balance spreads but on a recent trip to the grocery store, I noticed they had acoconut offering right next to all their other butter-type spreads. It definitely has a noticeable coconut flavor so I've only used it in baking, thus far, in place of my regular Soy Free Earth Balance Spread. I figured the added coconut would be a great compliment to my favorite vegan banana bread and I'd be thrilled with this product but I've tried it twice and both times it's made my banana bread more chewy and given it a harder crust.
So, I figure my next attempt has to be in some sort of stir fry or curry, where the coconut flavor would be a compliment but where I'm not so much concerned with attaining right crumb texture of bread.
