Our zucchini plants are still going strong, so I am still trying new zucchini recipes! Here's the latest one.
2 cups flour
1 1/2 cups sugar
1 tsp salt
1 1/2 tsp baking soda
1/2 cup cocoa
2 cups shredded zucchini (drained)
1/2 cup oil
2 tsp vanilla
Blend all the ingredients together. Spread batter on pan. I used a jelly roll pan which was 11X16 ish? You could probably use a 9X13 pan, but that be more like cake. Bake 18 to 20 minutes at 350 degrees.
A note about the zucchini: I put it in a food processor so it was very finely shredded, and I don't even notice it in the brownies. I think it would be fine coarsely grated though.
The recipe recommends frosting them with chocolate frosting, but they are great without it! They're a little crumbly, but very cake-like and delicious. Plus, they have zucchini in them, so they're practically health food, right?
