Happy Wednesday! We're almost there!
This lunch idea was inspired by this pin by Rachael Ray and I'm slightly obsessed right now. You see, I'm a wrap-making failure. They never stay together, all the ingredients fall out, and the wrap itself is always soggy after being in the fridge. I have since found the perfect cast of ingredients and will probably be eating this for lunch the rest of the summer.
For two wraps (one wrap shown above):
2 slices of very thin flatbread (I like Flat Out)
1 cucumber, peeled and diced to about 1/2 inch
1 stalk green onion, minced
3 laughing cow cheese wedges in your favorite flavor (I like the creamy swiss or french onion)
5 oz plain greek yogurt (I used Dannon's Oikos)
2 tsp. ranch powder
4 slices of deli quality oven roasted turkey
Mix the cucumber, green onion, cheese, yogurt, and ranch all together until mixed well. Spread half on both wraps and top each wrap with two slices of turkey. Roll up and cut in half to enjoy immensely.
Depending on what specific ingredients you use, one wrap will come out to about 300-400 calories a wrap. Not too shabby for an easy workday lunch! You can also cut these bad boys into little deli spiral slices for an easy appetizer.

I love to use hummus as a wrap spread. Throw in some cherry tomatoes, lettuce, avocado and cucumber and you're set!
