I've already told you about my addiction to homemade granola, which is now my favorite weekday breakfast, and my weekend breakfast obsession is these oatmeal pancakes. I found the recipe via Amalah. As she says in her recipe post, the ingredient list sounds far too healthy to taste good, including quick oats, whole wheat flour and only a tablespoon of sweetener in the form of maple syrup. But man are these greater than the sum of their parts!
The oats give them great texture, they are nice and moist, and the cinnamon and nutmeg take them out of ordinary pancake territory. The leftovers freeze beautifully and can be reheated (either in the toaster or the microwave) as a weekday breakfast option. I can't stop eating them, and neither can my kids.






The pancakes look delicious, but the kids are cute enough to eat!
