I know, I know. I posted about cake, then candied almonds, and now cookies! I promise I do make things that don't involve any sugar. Someday I'll post about one of those. But not today!

Ingredients:
2/3 cup butter
1/3 cup sugar
2 eggs
1 tsp vanilla
1/2 tsp salt
1 1/2 cups flour
3/4 cup finely chopped walnuts
1/3 cup cherry or strawberry preserves
Instructions:
Cream butter and sugar together til fluffy. Add 2 egg yolks, the vanilla, and the salt and beat well. Gradually add the flour, mixing well. Shape into 3/4 inch balls; dip in 2 slightly beaten egg whites, then roll in the walnuts. Place on a greased cookie sheet. Press down the center of each cookie with your thumb.
Bake at 350 degrees for 15-17 minutes. Cool slightly, then remove from pan and cool on a rack. Just before serving, use the preserves to fill the centers of the cookies. Makes 3 dozen.
Why eat jam on toast when you could eat it on a cookie, right?






I make these every Christmas, though I fill them with buttercream frosting or a Hershey kiss! Switching out pecans for the walnuts is also delicious!
