My newest favorite pizza is this Thai Chicken Pizza from Annie's Eats. (YES, I know all I cook are things from this website, BUT EVERYTHING IS SO TASTY.)
This Thai Chicken pizza is super simple and uses a lot of things I tend to already have in my kitchen. I pile on waaaay more cilantro than she calls for and I usually add some thinly sliced red pepper. Sometimes I use cashews instead of peanuts. Half the time I don't even put chicken on it. STILL YUMMY.
A really brilliant thing about this pizza (and any other one) is pizza dough freezes BEAUTIFULLY and tastes SO MUCH BETTER than the stuff in a blue can. Jessica likes this recipe for Jay's Signature Pizza Crust, but I use Annie's recipe. (Really, they're all probably pretty similar.) Annie's pizza crust recipe makes two, so I always have one left to freeze, which makes homemade pizza even easier. I mean, we are talking faster than delivery at this point.

Pesto sauce, fresh corn (straight off the cob; it'll cook in the oven), tomatoes, and mozzarella. Maybe some extra fresh basil if you have some. It's my favorite, favorite pizza and the amount of it Jeff and I can eat is, well, probably disgusting to outsiders. But it's oh so delicious.
The other regular pizza in our house is similar to Bertucci's folio pizza and is made with lemon pepper cream sauce, a ton of caramelized onions, mozzarella and prosciutto. So good.

I make pizza every Friday night, and it's amazing how much better it is than the pizzas we used to order. Our basic is a plain marinara and mozzarella pizza, but after pulling it out of the oven, I top it with chopped arugula, a few squirts of lemon juice, and a drizzle of olive oil.
My favorite fancier pizzas are seasonal. The winter version has a layer of fontina, a sprinkling of sausage, some sauteed broccoli rabe, caramelized onions, and mozzarella. Intense, but SO GOOD. My summer favorite is roasted pepper with basil, goat cheese, and fresh mozzarella. In fact, I think that is totally going on the menu for this week. YUM.

A little bit of brie, almonds and carmelized onion on a plain crust OR oil-free pesto, roasted tomato, thinly sliced mushrooms, mozzarella and a touch of parm OR bacon, chicken, artichoke hearts and spinach on a white sauce. (Last one stolen without apology from Papa Murphy's)

I started making pizza about a year go and we hardly ever order out now. Pioneer woman's steak pizza is very yummy. I also love a white pizza with ricotta, roasted garlic, spinach and prosciutto. Yum! Goat cheese and asparagus with a drizzle of olive oil is surprisingly yummy. My boys favorite though is sausage and mushroom with turkey Italian sausage and baby Bella mushrooms.

I make six pizza's worth of dough at a time and it's the BEST. I also freeze blocks of homemade pizza sauce. I find that as long as cheese is involved it doesn't matter what else is on it.
