I found these Carrot Crisps from Green Giant on my last trip to Costco and figured I'd give them a shot. Each package is 25% of your fruit and vegetable intake for the day, relatively low in sodium but gives the crunch of eating of a potato chip. Don't get me wrong, I am not saying these taste like potato chips because they obviously don't, but I like that they give a similar crunch. So far I've only eaten them plain, right out of the package, but I think they would stand up fantastically to some ranch dip.
