My husband has been traveling a lot recently, so I've been flying solo in the evenings. This means that, as much as I ordinarily love to cook, I've been phoning it in in a major way. Behold, some of my favorite things to call "dinner" when I'm "cooking" for one:
- Tricuits and extra extra sharp cheddar
- Raspberries, several handfuls
- A bag of baby spinach, microwaved until wilted, with half a lemon squeezed on top (Health food!)
- Autumn wheat cereal (2-3 bowls minimum)
- Chocolate chip cookies, baked fresh from the dough I keep frozen for just this sort of thing
- Kraft macaroni and cheese (no shame)
- Sauvignon blanc
And you? What do you eat when you're too lazy to make a proper dinner?






Quesadilla + glass of chardonnay = dinner of champions!

Either cold cereal or microwave popcorn and diet coke. Bonus points if there are M&Ms for dessert in either case.

If I'm on my own for dinner, it's a major treat (living la vida parental) so I usually run out to Whole Foods and indulge in some hot bar deliciousness.

I revert to "carbs and cheese" menus. Quesadillas, grilled cheese, mac and cheese. When he's gone for a week or more I force myself to eat a huge bowl of veggies/salad before eating any of these because otherwise I might have a heart attack. Thank god I'm married bc if I lived alone I'd eat like crap!
