I was recently sent a review copy of Bobby Flay-endorsed The Mom 100 Cookbook and because I enjoyed looking through it so much, I asked if we could host a giveaway on Food Lush. Thanks to Workman Publishing for the giveaway copy to one lucky reader.

I haven't gotten to make a dish yet, but this cookbook is full of comfort, classic dishes (and loads of good photos, which is so key for a cookbook, right?) and one thing that jumped out at me are the tips and variations Katie offers on many recipes. Vegetarian-friendly, different toppings to make fresh dishes, etc. She packs a few meals into one recipe, basically, and that's really helpful when you're no a budget and short on time. (I love the variety on her Black Beans and Rice recipe, or example.)

I also resort to "spaghetti in a jar" although we usually have a bag of frozen ravioli or tortellini. Jarred sauce, and a bunch of broccoli or spinach if it's a good day.

My go-to meal is usually pasta. We mix it up with different pasta shapes, veggies, and meats but I love to make homemade red sauce.

Roasted chicken thighs. Sure it takes an hour to cook, but the prep takes about five seconds. (Plus there's leftovers for chicken noodle soup later in the week)

I usually make tacos or parmesan crusted pork chops as a quick go-to meal.

My go-to meal in a hurry? Steam-in-bag veggies, pasta with meat sauce (jarred w/browned meat mixed in), and sliced apples.
Go-to, signature meal when I have time? Mexican lasagna. YUM.

Breakfast! If I'm pinched for time and/or money (which is happening more frequently as late) I go to pancakes, waffles, eggs and bacon. Quick, easy, cheap and best yet, a total crowd pleaser.

Mostly pasta. I think I really need this cookbook, because when I tried to think of my "signature dish" I thought, "ummm... Is frozen fish a signature dish? Peanut butter on toast?"

My go to recipe is usually a quick saute of frozen shrimp, mushrooms, and spinach with a side of brown rice (or all mixed together). I also use the same combo with quinoa, pasta, couscous, or in miso soup - so versatile!

Stir fry...I just chop up whatever veggies and meat are on hand; then I wing some sort of sauce. Tacos are another go-to. I keep pasta on hand for the kids...my boys love pasta tossed butter and frozen peas. I think it is gross but hey easy dinner if the husband won't be home for dinner

My go to meal is chicken and rice. Take some chicken tenders and a cup of rice, cover in a casserole dish with onion soup mix and water, season, and bake. That's it. And it tastes like you spent a lot of time on it!

A frittata is my go to meal. I always have leftover cheese, veggies, and protein that I can through together with a few eggs.
