A couple of weeks ago, I posted a loose vegetarian meal/shopping plan to help Kristie eat at work with her upcoming grueling schedule and I posted mainly whole cooked foods at that time. Now, I'd like to post a quick little round-up of my favorite vegetarian/vegan convenience foods to help round out her at work eating plan.
Garden Lites Roasted Vegetable Soufflé
These are vegetarian, as they contain egg whites, but they are also packed with veggies and are super tasty right from the microwave. I got mine at Costco and even though they list other varieties on their website (which I would love to try) the roasted vegetable seems to be the only one available to me at the moment.
Seeds of Change Whole Brown Rice & Quinoa Blend
Not only do I eat this on its own, mine is the garlic flavor, but I also used it in my veggie burgers and it worked perfectly. I have also mixed it with some pureed pumpkin, spices and nutritional yeast for a quick vitamin packed lunch.
Tasty Bite All Natural Indian & Pan-Asian Cuisine
I know how much Kristie loves Indian food and I've professed my love of this particular brand of convenience foods before but they really are that good. I always have their Thai Lime Rice , Barley Medley , and Chunky Chickpeas around here somewhere. Just looking up the links for this post has me finding at least a half a dozen other varieties I want to try.
Amy's Organic
Amy's is pretty obvious and I know for a fact that Kristie already knows about them and I'm pretty sure that she probably already knows about the Black Bean and Vegetable Burrito but I love the version with cheese so I'm betting the cheese free version has to be pretty banging as well. I like to top mine with sour cream that I've mixed with chipotle chili powder. YUM.
Slap these on a bun with some coleslaw on top? OMG! SO DELICIOUS!
Two things: 1) I know this isn't vegan but it's really tasty and 2) PLEASE RELEASE THE SAUSAGE CRUMBLES MORNINGSTAR. PLEASE! The Grillers Crumbles are CRAP! UGH. The sausage crumbles taste so much better and my cousin in Austin had them there briefly but now they have disappeared from anywhere. Also, I would like my Italian Sausages back in my stores. I can't find them anywhere and it makes me alternately sad and angry.
I tried these plain and with some Raspberry Chipotle dipping sauce. I am sure that they would be awesome with your typical marinara and pasta or as part of a "meatball" sub as well. I think they have a pretty pronounced eggplant flavor so if that isn't your bag, you might want to pass.
