I recently found out that I have gestational diabetes. Not a huge deal, but it did mean a HUGE change to my diet. (Apparently I have been living entirely on carbohydrates for the last 32 weeks.) I've never done any kind of low-carb diet before so this is sort of a foreign world for me. However, I know that eggs are a good food for this diet so I've been eating them a lot. Like, every day. So far I've mostly been making them my favorite way -- scrambled with green pepper, onion, ham, and cheese.

Delicious yes, but I don't think I'll be wanting to eat these every day for the next 7 weeks. Point is, I need some new ways to fix eggs.
So tell me: What's your favorite way to eat eggs?






Quiche! My favorite quiche recipe is from Smitten Kitchen: http://smittenkitchen.com/2008/09/spinach-quiche-revisited/
It comes together quickly and is so easily adaptable. I've made it crustless plenty of times (since you're avoiding carbs), you can mix up the types of cheeses you use (I usually go with the gruyere-parmesan mix she suggests), you can use different flavored cream cheeses, you can add an extra egg or two and it doesn't change it much, you can use low-fat cream cheese and skim milk instead of the regular cream cheese and the cream if you prefer, you can throw in some onions or scallions or shallots. It's also really easy to make up a double batch of the quiche filling, cook both quiches, and then freeze one. This recipe gets RAVE reviews whenever I make it - seriously, every time one of my friends hosts a brunch, they ask that I bring it.

This might gross some people out, but I love making scrambled egg sandwiches with mayo. Of course the bread has carbs, but they do have low carb bread nowadays.
And egg salad is great, whether you have bread or not. Mayo, mustard, relish, salt, pepper, and boiled eggs. I keep mine pretty simple.

The best scrambled eggs are made with a ratio of one egg to one slice of American cheese. (The fake orange American cheese. And I stopped buying it in favor of real cheese a couple of years ago, but I do so miss the eggs.) The best omelet is made with avocado, fresh tomatoes, cheese, and ham. Also, I learned on the Food Network years ago that eggs are fluffier if you cook them very slowly. I never do this because I am too impatient, but when I did try it, it did actually work.

We eat a TON of eggs. A ton. My favorite quick and easy way is to do a frittata, since you can put whatever you want in them and they cook up in almost no time. My favorite is with ham, mozzarella, asparagus and parmesean, then topped at the end w/tomatoes. Yum. But you can literally put whatever you want in them.
Other favorites: egg burritos (w/ or w/out beans, depending on if we're doing breakfast for dinner), egg tacos (with ham or bacon in corn tortillas), and of course, hard boiled with a little salt for a snack.

The egg in a cup thing that was on here a couple of weeks ago? AWESOME! I've been putting two eggs in a cup with a wedge of laughing cow and it is AMAZING when you are in a hurry!

I agree with Stephanie about the quiche from Smitten Kitchen - Wonderful!
When I was pregnant, I often ate hard boiled eggs as a snack or on a salad for extra protein. Lately, my 2 year old has been asking for "burritos" where I scramble eggs with cheese and scallions and black beans and let him roll it in a tortilla.

sometimes i just crack and egg into the pan once it's hot and do a rough scramble. it's a little different than regular scrambled, but good!!

Potato Basil Frittata! I've made this recipe several times, and it is SO delicious. I love each of the ingredients on their own, and together they are even better. It's an Ina Garten recipe, and I've never gone wrong with one of hers.

Soft boiled eggs are my current fav. although toast soldiers are a requirement for them (for me at least!)

My favorite omelette is one that I get at IHOP, and keep meaning to try to make at home. It has several kinds of meat -- bacon, ham, shredded beef -- cheese, and then they serve it with salsa to top it. Mmmm...now I want one.

Make almond/coconut flour pancakes with your eggs. you won't realize youre eating eggs. :) My recipe is
2 T coconut flour
4 T almond flour
1 large egg
1/2 t baking powder
dash of vanilla extract if you like (optional)
1/3 - 1/4 c cream (or coconut milk or water) to proper consistency. Add your liquid slowly while mixing until you get a good slightly thick batter. (Comes out great with any of those ingredients)
You want a slightly thick batter because it won't rise as much as a regular pancake. Sizzle your pancakes in some butter or coconut oil on a medium to med-hot griddle, flip when the edges dry out. You might not get traditional bubbles on top.
That makes about 4 six-inch pancakes. Serve with some butter, or berries, or low-sugar syrup.
