My parents recently went to one of those Brazilian steakhouses where servers walk around with giant skewers of meat from which they will slice off hunks for you until you cry uncle. But when they came home, what they talked about were the little cheese rolls that came with their meal. So my mom went on a quest to find out what these tiny balls of deliciousness were all about and how to recreate them in her own home.
It turns out the rolls are known as pan di queijo, and are a popular snack and breakfast in many parts of South America. Now there are several recipes for the little nuggets, and a common denominator, at least among the majority of the ones I’ve found, seems to be tapioca flour, which makes for a light and airy popover-like muffin with a crispy, golden crust. As a bonus, using tapioca flour makes these gluten free.
These carby bites were incredibly easy to make, and after one taste, I was hooked. If you’re looking for a twist on your typical dinner rolls, give these a try.
