I bet a lot of you have already seen this trick floating around Pinterest, but I had to share because it's my new favorite thing. Seriously, I discovered it last week and i've already done it three times. It's such a great, easy way to make a normally boring meal into something a little more fun. I love eating taco salads in tortilla bowls at restaurants, but they're usually heavily fried and that's just not something I can make OR eat on a regular basis. For these baked bowls, all you do is wrap a few small-to-medium flour tortillas (only three will fit on one pan) in a paper towel and heat them in the microwave for about 15-30 seconds until they are fairly pliable, then spray each side of the tortillas with cooking spray and position them on a flipped-over cupcake pan like so:

Bake for 10 minutes at 350 degrees or until golden brown. Let them cool for a bit and then fill them with whatever your heart desires. Make it a bowl for serving guacamole! An alternative to tacos! Fill it with rice, beans, and crock pot mexican chicken, which is what I did and it was fantastic. I loved having that extra crunch to enjoy in an otherwise mushy (but yummy!) meal.

Where do you find tortillas as small as those in your picture? I bought small and had to cut them down.

I think I used the fajita sized flour tortillas, actually. But I think you can use any size depending on how big you want them to be.

you can sprinkle cinnamon and sugar on the microwaved tortillas and then bake them. Fill with ice cream and maple syrup for a nice dessert!
