I'm a major carbaholic, and what is better than a messy loaded baked potato? I love mine with bacon, cheese, butter, and a ton (TON!) of sour cream. Sadly my delicious fixings needed cutting back, so I came up with a lightened up version of one of my favorite side dishes.
For a medium potato:
1 potato - 168 calories
1 strip turkey bacon - 25 calories
1 T light ranch dressing - 40 calories
1/4 cup green onions, coarsely chopped - 8 calories
1 piece light Babybel cheese - 50 calories
1 tsp. garlic powder
salt and pepper to taste
Cook your potato as you normally would (I usually microwave mine to save time). Mix all your remaining ingredients together. When your potato is ready cut it down the middle and stuff it. Set it under your broiler and broil until the stuffing begins to brown and bubble. Enjoy!
Total calories - 291
Not too much damage, considering I still get my cheese and bacon fix, right?

I've been popping aluminum foil wrapped potatoes into the slow cooker in the mornings and having delish baked potatoes for dinner. We use Greek Yogurt instead of sour cream, turkey taco meat and salsa or sometimes broccoli and cheese sauce (totally not low calorie though!). Loaded baked potatoes are one of my favorite meals.
