The recipe I'm about to share with you is for real. If you can even call it a recipe since it calls for two ingredients. A friend of mine mentioned it a few weeks ago and I literally thought she was messing with me. Then I came across it on Pinterest and realized maybe she was being serious. And, of course, I had to try it out for myself for fear of endorsing something on Food Lush that turned out to be gross. The result was that this "diet cake" IS legit, and really pretty good. Brace yourself:
1 can of Diet Soda (I used Sprite Zero)
1 Box of Yellow Cake Mix
MIx together thoroughly, bake at 350 for 35 minutes, and TA-DAAAAAA. Okay, so in terms of taste and texture, I could definitely tell this wasn't full-fat cake. It was more dense, and not quite as sweet as boxed cake made with eggs and oil, but for a diet cake, I seriously enjoyed it. I had one slice with Cool Whip on top and one without (I know, the sacrifices I make for you Food Lushers) and I actually preferred it without the Whip. In fact, there are myriad combinations that you can try with diet soda and cake mix. Check out this post on Put Down the Donut. So, I may be late to this paryy, but have any of you out there tried any of the combinations mentioned on Put Down the Donut? I think this is a fantastic way to indulge in a cake craving without the guilt.
