My grandma came to our house for Christmas this year bearing a car full of baked goods. Seriously. Her car was FULL. She just kept producing plastic bins of cookies and candy. We had to pull out our card table to accommodate all of it. While her cheese straws are the bomb, my favorite this year were her Date Pinwheel Cookies. They are sweet, but not too sweet, and have a special, holiday taste. They're not hard to make, especially now that I have a KITCHENAID STAND MIXER OMG! (Also brought to me by my grandma....she's kind of awesome.)
DATE PINWHEEL COOKIES
- 1 cup shortening
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 3 large eggs
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Filling:
- 8 ounces chopped dates
- 1 cup pecans, chopped
- 3/4 cup granulated sugar
- 1/2 cup boiling water
Preheat oven to 375°. In a largemixing bowl, cream shortening, then add sugars. Beat in eggs; add dry ingedients and vanilla extract until dough is formed. Chill dough thoroughly.
Meanwhile, combine filling ingredients in a saucepan; boil until thick. Let cool to room temperature.
Roll out the chilled cookie dough into a rectangle between two sheets of waxed paper. Spread the cooled date filling over the cookie dough. Roll up the cookie dough, jellyroll-style. Wrap in waxed paper and chill before slicing. Slice and bake at 375° for 8-10 minutes or until just brown.
