I'm not normally a sweets-for-breakfast kind of gal. I'll take bacon and eggs over a sugary waffle any day. Which is why is surprised me how much I loved these apple pancakes. They are very easy to make, and adding some fruit provides a nice variation in texture. First, we shredded up the apple, then mixed it in with the pancake batter and proceeded as normal. Next time I think I'd like to chop the apple into small cubes rather than shred it with a box grater. You could taste the apple, but I think it would be even better to have those larger pieces in each bite.
I don't know why it took me this long to try throwing apples into the pancake batter. After all, blueberry pancakes? Chocolate chip pancakes? Hello?

PS. Does anyone else shop at Wegmans? We have one about 30 minutes away and it is pure joy.






I live in the land of Wegmans (Rochester, NY). It is one of my favorite places and I miss it dearly when I travel.

Hi Heidi! I'm from Rochester, too. And, I really don't know if I could move somewhere without a Wegmans. It's amazing.

I add mashed bananas in the batter and use strawberry syrup- pure joy.

It's not a fruit addition but try adding fully cooked crunchy bacon and get ready...shredded cheddar cheese. This salty-sweet combination will blow your mind! With some warm, sweet maple syrup (hello? Who doesn't love bacon or sausage dipped in breakfast syrup!) I only wish I could take credit for this gem of an idea, but, the Beach Grass Cafe in Solana Beach, CA is where I got the idea. My favorite item on their menu! Give it a go, it doesn't disappoint.
