I have a confession: for many years, I made gingerbread cookies with a mix. There is absolutely nothing wrong with this, at all, so please go ahead and use a mix if it means more gingerbread people in the world this holiday. My problem was not with the mix but with me forgetting to buy it. And then not being able to find it in the store because all the prepared people had bought it all.
So, I took to the internet and found this fantastic recipe from, of all places, Cooking Light. Although I know Cooking Light makes fabulous desserts, I have a hard time associating the two, so this came as a surprise. And a welcome surprise it was, because cookies with fewer calories that taste amazing? I am IN. Bonus points for a list of ingredients that I actually have on hand most of the time.

I finally tried my hand at homemade gingerbread cookies this year and I had so much fun making them! They're pretty easy and soooooo good. Not to mention how cute they are when you decorate them. My favorites to make, aside from regular old gingerbread men, are gingerbread Christmas trees with a piped star and mini-M and M ornaments!
