The idea for this recipe comes from a family friend who is a fabulous cook. I get bored with traditional green salads, but in the colder months it's hard to come up with new ideas for raw vegetables. Enter the apple fennel salad. It is sweet and tart and crunchy, with a faint licorice twist from the fennel. Even if you hate licorice you should give it a try, as the flavor is really subtle. The basic version of the salad has only 5 ingredients, but you could easily mix it up by adding toasted nuts (I think walnuts would be great) or some crumbly cheese. This salad has also been a hit with the two-year-old in my house.
Apple Fennel Salad
2 apples, peeled and chopped (Honeycrisp or Granny Smith work really well)
2 fennel bulbs, halved and cut into 1/2 inch slivers
1/4 cup raisins
3 Tb. olive oil
1 Tb. lemon juice
salt and pepper
Combine all ingredients and toss to mix.
