I'm always looking for quick recipes for Tuesday nights. I come home at 4:30 make dinner and then am back out the door at 5:30 for a class. I'm officially in the senior citizen club for eating dinner.
I had an extra red bell pepper lying around so I threw that in too. I also used sausage instead of turkey sausage. I know turkey sausage is better for your but I find turkey sausage cumbersome. I didn't add any oil to the recipe because the sausage made enough oil. One last change I made was, that I used chicken stock instead of cooking wine. I rarely cook with wine. We don't usually have wine lying around -- now beer is a different story!
This made so many veggies, that I put some aside for the next night's dinner. I thought sauteed veggies would be a nice accompaniment to Grilled Indian-Spiced Chicken.
