Once upon a time, I was a morning person -- fully functional as soon as my alarm clock went off and always right out of bed on the first beep. Now is not that time. There are many different things contributing to my current morning fog but since they seem to not be changing anytime soon, I've had to learn to automate things in the morning to make my life a bit easier. Otherwise, it'd be 11 o'clock and I'd suddenly be ravenously hungry with no idea how because I never ate breakfast hours before.
Fortunately I have my coffee maker, which couldn't be simpler but my usual breakfast of Kashi waffles with peanut butter and honey is actually somewhat of a pain. Mainly this is due to the fact that I buy them in bulk at Costco which means they are outside in the chest freezer of SUPER COLDNESS and because they are hard frozen, a simple toasting will not do.
At any rate, I wanted something quicker that still had a good fiber and protein content and that's how I came up with what I eat every day now:
Old Fashioned Oats cooked in coconut milk with cinnamon, chia seeds and shredded coconut. I reduce the serving size to 1/3 cup of oats which means 2/3 cup of coconut milk, stir together and then pop in the microwave. 3 1/2 minutes seems to be the sweet spot for my microwave, YMMV, and once out I add the cinnamon, 2 tsps of chia seeds and a couple of three-fingered pinches of the coconut. The chia seeds and coconut help soak up any additional coconut milk so that the resulting mix is not soupy at all, I prefer my oatmeal that way.
Since I use the original (not unsweetened) coconut milk and sweetened shredded coconut, I don't add any additional sugars or sweeteners. Chia seeds and cinnamon are both high in antioxidants and the coconut milk is high in calcium and protein. Add that to the natural goodness of the oats and it makes for a tasty, filling and healthful breakfast!

I'm glad you asked! I have been so addicted to Chex cereal lately. I've been making time to eat cereal every morning. I make a smoothie every morning and a cup of coffee with my Keurig. Here's my post about it!

We eat oatmeal around here most mornings too, because my kids are ravenously hungry the minute they get up (6:45) and don't want to wait longer than like 37 seconds for breakfast. I cook the old fashioned oats on the stove, 2 servings for the 3 of us (my kids are toddlers) sweeten with a little brown sugar and add a little milk. They love it and I love that it's filling so they're not asking me for snacks 15 minutes after they finish breakfast.
