I may have previously mentioned that I love a good mojito, well, because I do. When a friend and I hit Chuy's for dinner last night and I saw a watermelon mojito on their drink list, I ordered one and proceeded to daydream about it until it was delivered.
It was ... ok. Don't get me wrong, Chuy's does great drinks and isn't chincy with the alcohol, if you know what I'm sayin', but it was muddled with so much fresh mint that I ended up chewing my drink as though it was a salad. FAIL.
I just so happened to have everything I need on hand to make my own version of this fruity summer cocktail, so my husband was kind enough to take one for the team and drink it so that I could photograph it's creation. He's a real giver, you guys.
So, without further adieu, I give you Watermelon Mojito ala Erica:
You will need a shaker filled with ice, lemon rum, mint simple syrup, seltzer or clear pop, lime juice and watermelon. Also, a device that measures in ounces.
(Listen, I know this isn't the traditional method of making a mojito, but like I said, I like this drink so I make it rather often. I've learned the shortcuts and, honestly, I like it better this way. Feel free to use traditional simple syrup, muddle the mint, whatever makes you happy.)
You will need 1 ounce of mint syrup and 1.5-2 ounces of lemon rum. Add a healthy squirt of lime juice. Pour into the shaker.
I had some watermelon cubes already in a ziplock bag and just used the measuring glass to smoosh the bejeezus out of it until it looked like this:
Even seedless watermelons have these little seeds. I just skimmed them off the top of the drink with a spoon.
Add the melon juice to the shaker. I went for about half mojito mix and half juice for my first attempt and really liked it.
Make sure the lid is sealed tightly on the shaker and shake well. TRUST ME ON THIS.
Pour into your favorite glass and top with a splash of seltzer or clear pop, et voila! You have a fruity and refreshing summer cocktail. I plan to serve them at my son's and my birthday party next weekend. Bring me an awesome present and I'll make yours a double. Deal?

They should invent a Mojito Trophy, because that's what you just won with this drink.
The trophy will obviously be a large cup style, which you will then fill with this delicious concoction.
I've traditionally been a beer girl with the occasional gin & tonic thrown in, but lately I've really been getting into Drinkier Drinks - I can't wait to try this for summer!

I will be making myself one THIS WEEKEND to celebrate my floors being done, or drowning my sorrows when my floors aren't done. EITHER WAY.

I made this for myself to go with my Mother's Day supper and I was in heaven. HEAVEN! And I didn't even know I liked Mojitos!
