Fried rice! Chop up any kind of leftover meat (we're doing pork loin tonight), fry it in a pan or a wok with some oil, veggies, scrambled egg and soy sauce. Magic.


I have the same problem. My husband hates eating left overs too.

I wanted to get better at freezing stuff!


I have a regular rotation of "leftover do-overs" that come a day or two after one of my regular meals. So much so that when I roast a chicken, my 6 year old will perk up and say, "Are we having Sofa Chicken tomorrow?" Leftover ham is usually incorporated into a great breakfast casserole, with eggs, shredded hash browns and cheese. With a fruit salad, it's one of my family's favorite meals.
