I don't know about people in your household, but my husband doesn't like to eat leftovers. He is willing to take them to work for lunch, but that's all. So when we end up with more than one lunch worth of leftovers, I have to come up with new things to do with old food. I'm getting better at it, so for those of you with leftover haters, here are some of my favorite remakes:
Leftover grilled chicken or steak: slice thinly and saute with peppers and onions for some delicious fajitas. Bonus, your meat is already seasoned! Or, slice and add to a nice salad.
Leftover taco meat: makes great nachos, burritos or taco salad. Yes, that is an obvious choice, but still, not the same meal! It's also easy to make into chili.
Leftover ham: my favorite use for leftover ham is omelets. Ham, green peppers, onions, cheese. Delicious. There are also lots of soups that take ham, and are especially good with a ham hock. Split pea, ham and bean, lentil, ham and barely, the list goes on.
Almost any leftover meat can be made into a sandwich. (And who doesn't love a good sandwich?) Leftover baked potatoes are great in soup or breakfast burritos. Leftover steamed veggies can fancy up a salad, or make your pasta more interesting.
Anyway, in addition to making me more creative with my cooking, this has helped us cut WAY down on the amount of food we throw out in the form of leftovers gone bad.
