I've been doing a bit of cooking lately. Which seems odd of me to say, because it's pretty much common place that I cook every night of the week and save the eating out for the weekends, but with the recent floor project that ate up all of my will and energy, I had been on hiatus (I also had no kitchen but that's neither here nor there). To make up for the lack of real food in our diets lately, I've gotten back in the kitchen with the following dishes.
Vegan Enchiladas from Oh She Glows which I made vegetarian with the addition of the shredded cheese. I also didn't make the avocado cream sauce, choosing instead to use my Fat Tomato Tomatillo Avocado Salsa . In my experience, this recipe made 6 enchiladas, not 4, and they were still incredibly filling. Of course that might be because I used Flatout multi-grain wraps instead of tortillas.
Peach Crunch Cake from Bakerella which I altered with the addition of fresh blueberries and almonds instead of walnuts.
Eggplant Parmesan Stacks from Rachel Ray which I altered by leaving off the Swiss Chard and by making my own sauce, instead of following her recipe for the sauce.
Sugar Cookie Truffles from Cookies and Cups which I altered with the addition of semi-sweet chocolate and silver sugar sprinkles.
Vegan Berry Muffins adapted from Food.com I also made some fresh lemon curd to go with this muffins but sadly didn't take a picture. I've eaten the lemon curd on top of the muffins, but I also made some homemade whipped cream and just ate it straight out of a bowl with the whipped cream like a crustless lemon pie.
I've also made more of my aubergine dip and yesterday for lunch I had zucchini and pea "pasta" (I used my mandoline to cut the zucchini into pasta ribbons) with nutritional yeast "cheese" sauce.
