I might be a little late to the game here, but have you ever had corn casserole? I had never heard of it until the first Christmas I shared with my (then future) in-laws. My mother-in-law introduced me to this side dish and I assumed it took hours to make and included some sort of yeast-related baking involved because she is Queen Baker. Nope. This is a dump-and-go recipe like no other and it's fantastic. I think traditionally it's a cold-weather side dish (it's a staple at Christmas and Thanksgiving at the husband's side of the family) but it also reminds me of the amazing season in Pennsylvania known as roadside stand season. Starting around June you can't drive more than a couple miles around where I live without passing an old-time roadside stand, and sometimes it's as simple as the back of a farmer's pick-up. This is nostalgia at its best, folks, and also the stuff country songs are made of. In July we will start to see the first of the sweet corn and I am going to be all over that fresh corn to throw into this bake.
Baked Corn Casserole
{Recipe courtesy of my sweet mother-in-law}
1 can cream style corn
1 can whole kernel corn (un-drained)
1/2 cup oil
2 eggs
1 cup sour cream
1/4 cup sugar
1 box (7 1/2-8 oz.) corn muffin mix
Mix all ingredients together in a medium-large mixing bowl, then pour into a baking pan (or a deep round dish if you want it to look like PIE like my picture).
Bake at 350 for 40-60 minutes, or until the top of the bake is solid and doesn't resemble Jello. When you cut into it, it has a somewhat cakey texture, and it's also moist and delicious, like cake. However, since corn is the main ingrediant, it must be healthy ... right?

My recipe calls for cream cheese, not sour cream, butter, no oil, but let me tell you, it's one of my very favorite BBQ sides. I LOVE it with some saucy chicken and a fresh green salad!!!

My in-laws make this for holidays all the time as well and I finally asked for the recipe and I think this is it exactly! I specifically remember the canned corn and corn muffin mix. Bookmarking so I can make this with fresh as well! Should be any day now.
