A few months ago I was at a friend's birthday party and helping in the kitchen and my instructions were to put these together. Puff pastry and blue cheese are the only ingredients. The construction is simple and the result? Friends, the result is awesome. There's plenty of versatility in the recipe. If you don't like the cheese? Swap it. Don't like the shape? Create your own. Want to expand on it? Well, next time I plan to add some pecans and chopped dates. They're perfect as an appetizer and also served along side soup or salad. Enjoy!*

Blue Cheese Twists
Recipe via my friend Sarah
1/2 17.5oz package puff pastry sheets, defrosted
4 oz creamy blue cheese, room temperature
flour for dusting
Preheat your oven to 400 degrees. Unfold your puff pastry onto a counter lightly dusted with flour. Gently roll your puff pastry with a rolling pin to smooth out the crevices left by folding. Cut pastry sheet in half. Sprinkle/spread blue cheese on one half of the puff pastry sheet. Top with other half of sheet. Roll again with the rolling pin to press the sheets firmly together. With a sharp knife, slice pastry sandwich into 1/3 to 1/2 inch wide slices. Take slices and gently twist and stretch, lay on a parchment covered baking sheet, lightly pressing the ends down to keep them from unfurling. Bake for roughly 12 minutes, until the edges are golden brown. Stay close because the cheese likes to burn. These can be served warm or at room temperature.
Yields approximately 15 twists per half of pastry package.
