As I'm sure you've gathered from my posts on this site, I am currently on Weight Watchers. And I'm doing pretty well and counting my points and I'm seeing results. Yay me!
But this doesn't mean that most days I wouldn't rather shove my face full of deep dish pizza, steak burritos and wheels of cheese. I'm just choosing to eat everything in moderation because I really don't want to have to buy new fat pants.
My predicament then is to make things that are not only healthy, but good. And not just good, GOOOOOOOD. You know, the kind of lighter fare that makes you forget that it is light and kind of good for you.
One dish I've never been able to master as lighter fare is macaroni and cheese. Because let's face it, the best mac and cheese is loaded with lots and lots of cheese. I've tried a few different WW recipes and while they have been tasty, they haven't been the kind of mac and cheese one craves.
Recently I saw this four-cheese mac and cheese featured on Weight Watchers. I figured it was worth a try. And let me tell you, it was fantastic. It was cheesy! And gooey! And also baked in the oven so it got that baked in mac and cheese goodness!
The best part? It was filling! Now look, I'm almost six feet tall and I'm no skinny mini. I can eat. I'm from Chicago. Besides drinking, it's the best thing we know how to do. So when I'm saying it is filling, it is FILLING. One serving and some veggies and I was set for dinner.
Tasty, good for you and filling? It's the trifecta of awesomeness!
