While in Oklahoma over Thanksgiving, I stayed with my cousin, his wife and their twin 5-year-old boys. While there, I found an oasis that lived in their pantry. COCOA ROASTED ALMONDS. I tried to spend most of my visit outside of their walk-in pantry, you know, not to be rude and all, but I couldn't help myself. These were SO good and the perfect snack when I wanted something sweet, but hearty all in the same handful.

(These big jars are around $9 at Sams Club. The 100 calorie packs are for sale at Walmart and only $3.27 for a pack of 7 at Amazon. Amazon seems to be selling the larger jars for $24.90. Eek.)
Now, if you are anything like me, when you crave something and you want it NOW, you take matters into your own hands. In this case, I tried making these puppies myself. And you know what? They worked. They were messy and some nuts had more cocoa/butter/sugar on them, but bottom line, I GOT TO EAT COCOA DUSTED ALMONDS. And it took 15 minutes to do so. Go me.
Cocoa Dusted Almonds
- Raw Almonds (whole) - 3 cups
- Butter, unsalted - 1/3 stick
- Sugar - 5 tsp (or to taste)
- Unsweetened cocoa powder - 1/4 cup
Preheat oven to 350, and spray baking sheet with non-stick spray.
Melt butter in the microwave.
Put almonds, sugar, cocoa powder and butter all into a gallon size bag and shake well until almonds are completely coated.
Pour the mix out onto the baking sheet and bake for approximately 10 minutes. Let cool and enjoy!
(Variation - instead of cocoa powder, replace with cinnamon for cinnamon sweet almonds.)

These sound tasty. I've done cinnamon sugar almonds before. I always buy my raw almonds at trader joe's. They are pretty inexpensive there.

K- That's where I bought mine yesterday!
Used half my bag to make these chocolate ones and saving the rest for the Parmesan ones. :)
