This past weekend I threw a 33rd birthday party for my husband and since his birthday was October 3rd, I made it into a three-themed shindig. I had grand plans to do a million things for this party but I ... didn't. I did rock my party menu though, so let's talk about that.
I got this awesome, delicious, and very, very potent recipe from the lovely AndreAnna and poured it into this inexpensive jug from World Market. (I think the jug was around $6 and I got loads of compliments on it.)
For the appetizers and snacks we had a delicious, yummy, devoured-too-soon corn dip courtesy of Kristabella. The recipe is as follows:
1 c. mayo
1/2 jalapeno pepper, chopped
1 c. shredded cheddar cheese
1 12 or 16 oz can of corn
1 c. chopped onion
Combine all ingredients in an oven proof dish and bake for 25 minutes at 350 F. It was that easy!
I also made this three-layer dip (even better the next day!), a three-cheese spread, and a friend brought Three Musketeers bars.
Then, dessert:
Tres leches cupcakes, which I heard were delicious but I didn't get to try one. (Also, confession: I didn't make the frosting, I used a canned butter cream I already had and sprinkled some shaved coconut on top.) There were also triple chocolate brownies.
So, there you have it!
I'm already planning the menu for his 44th birthday. He's not thrilled thinking about that day.
